Tacoless Salad


I like fajita night, but if i have to throw a couple of tortillas in it ends up killing my 400 calorie max diet

I decided to find a way to still enjoy Fajita night and keep it low…heres my trick on how to enjoy your meal….and watch your weight too!


Ingredients:(serves 2)

1 large avocado

2 tbsp fresh cilantro, chopped

1 tbsp lime juice

1/4 red onion, chopped

1/4c low fat sour cream


about 20 jumbo shrimp or 30 smaller shrimp

3 bell peppers

2 garlic cloves

2 large onions

1 jalapeno, optional (keep more seeds to have more heat)

1/4c of teriyaki sauce (eyeball it)

a few lettuce leaves, sliced very thin (AKA shredded)


Clean, peel and devein shrimp.Dry with paper towel. Add to a bowl, toss with a small amount of oil, salt, pepper and any other seasoning you like on shrimp (old bay, paprika, garlic).

Heat a small amount of canola oil in a pan and cook the onions and garlic. Add peppers after a few minutes and keep the pan on medium high heat. Stir occasionally until browned. Add the teriyaki sauce and let it get married. Set the onions and peppers aside in a large bowl and cover with tin foil. Use same pan and add shrimp.Cook shrimp about 3 minutes per side.

Mash the avocado, 1 tbsp lime juice and chopped cilantro in a bowl with the chopped red onion. Add salt and pepper to taste.

Add half the pepper mixture to a bowl, top with the shredded lettuce. Add the shrimp on top, then a dollop of the sour cream, salsa and guacamole.
